  • 1 1/2 cups (180g) all-purpose flour
  • 1/2 cup (113g) unsalted butter, chilled and diced
  • 1/4 cup (50g) granulated sugar
  • 1/4 tsp (1g) salt
  • 1 large egg yolk
  • 2-3 tbsp (30-45ml) ice water
  • 1 cup (240ml) A.R.K Artisan Passion Fruit Curd
  • Fresh berries and mint leaves, for garnish (optional)


  1. In a food processor, combine the flour, butter, sugar, and salt. Pulse until the mixture resembles coarse crumbs.

  2. Add the egg yolk and 2 tablespoons of ice water. Pulse until the dough starts to come together, adding more water if necessary.

  3. Turn the dough out onto a lightly floured surface and shape it into a disc. Wrap in plastic wrap and refrigerate for at least 1 hour.

  4. Preheat your oven to 350°F (180°C). Lightly grease a 12-cup mini tart pan or muffin tin.

  5. Roll out the chilled dough on a floured surface to about 1/8-inch (3mm) thickness. Cut out 12 rounds using a cookie cutter or glass, and press them into the prepared pan.

  6. Bake the tart shells for 12-15 minutes, or until lightly golden. Remove from the oven and let cool completely.

  7. Once cooled, fill each tart shell with a generous spoonful of our Passion Fruit Curd. Garnish with fresh berries and mint leaves, if desired, and serve.
